Anyone know why Freddie never sang the word shit from the line "buckle down and shovel shit" live? Knowing Freddie, it seems like he would only enunciate such word.

Maybe the versions you've heard were meant fo broadcast so he chose not to sing it?

My guess is that they just came out as a band, so it would be risky to be controversial at the beginning of the career.

He was playing it safe. Its not as easy as it seems to say a vulgarity on stage as a performer, Its like he didnt wanna ruin the moment you know? But later on in his career he got comfortable about it and it didnt matter...
